Cauliflower Mock Garlic Mashed Potatoes

IMG_1292You’re gonna love this low-carb, healthier alternative to mashed potatoes!  We had this as a side for our Pork-rind crusted Chicken Fried Steak and it was a perfect side-kick!

Cauliflower Mock Garlic Mashed Potatoes
A low-carb version of one of your favorite dinner sidekicks!

BUY
  1. 1 head of cauliflower, grated
  2. 1/4 cup of cream cheese (softened)
  3. 2 tbsp of butter
  4. 1 tsp of fresh chopped rosemary
  5. 1 tsp of minced garlic
  6. 1 tsp garlic powder
  7. kosher salt and black pepper
  8. 1/4 cup of parmesan cheese
CUC
  1. Boil cauliflower until soft
  2. Strain and pat dry
  3. In a medium-sized saucepan, heat butter, garlic and rosemary
  4. Add cauliflower to the pan
  5. Add cheese, cream cheese and garlic powder
  6. Turn off heat and use a hand blender to emulsify the cauliflower mixture
  7. add a few pinches of salt and pepper
  8. Serve with another sliver of butter on top
Notes
  1. Serve alongside the Pork-Rind Crusted Chicken Fried Steak for a super low-carb meal!
